When you bring home a lemon bar or cookie from Frost, how do you keep your favorite dessert tasting its best? Learn how to store baked goods so you can enjoy that fresh-baked taste with every bite.

Knowing how to keep baked goods fresh will help you maintain their taste and texture. In general, you should eat freshly baked goods on the day you purchase them for optimum flavor. But if you can’t enjoy bakery products like cake truffles or fruit tarts right away, you’ll want to keep them in an airtight container to preserve their freshness. Baked goods that contain pastry cream fillings like eclairs or frostings will hold up better wrapped well in plastic wrap or stored in an airtight container in the refrigerator.

Freezing can work well as a method for preserving baked goods such as cookies. To freeze fresh cookies, for example, first place a single layer of bubble wrap in the bottom of a resealable, airtight freezer-proof container. To maximize space in the container, use wrap with bubbles measuring about ⅛ inch in diameter. The bubble wrap protects the cookies from breaking while in storage.

Place a piece of parchment paper on top of the bubble wrap and add the cookies in an even layer on top of the parchment. Repeat, alternating with pieces of bubble wrap and parchment paper, until the container is filled. Seal the container and put it in the coldest part of your freezer.

For bakery products such as slices of cake, wrap each item individually in plastic wrap and transfer the pieces to a resealable plastic freezer bag. Before sealing the bag, press out the air from inside the bag to prevent freezer frost from forming.

When you want to enjoy your frozen baked goods, thaw the bakery products in their freezer-proof containers. This allows the condensation from defrosting to accumulate on the outside of the container or the wrapping, not on your delicious baked goods. You can thaw your baked goods in your refrigerator or on your kitchen counter overnight.

Brownies and Cookies

When stored at room temperature in an airtight container, cookies will stay fresh for about five days. Store similar cookie types together, crispy with crispy and chewy with chewy, to maintain their texture.

Cake

Frosted slices of cake can stay tightly wrapped in plastic or in an airtight container in the refrigerator for up to a week.

Cupcakes

Unfrosted cupcakes can stay on your kitchen counter in an airtight container for up to three days before eating. Store frosted cupcakes in an airtight container in the refrigerator for up to three days.

Tarts and Tortes

How you store slices of tarts and tortes depends on the ingredients used in them. If they contain dairy products, wrap in plastic wrap and store in the refrigerator for up to three days. Tarts with a baked fruit filling can be kept at room temperature for about a day; refrigerate if you don’t plan to eat them within a day.
