When life gives you lemons, you make lemonade. When a birthday or special party leaves an abundance of desserts behind at the end of your event, you start figuring out what to do with leftover cake. Our team at Frost Artisan Bakery has several ideas to help you creatively leverage your leftovers.
Create Cake Truffles
Cake truffles are a fun adaptation of their candy counterparts. The little balls of cake are perfect to snack on as a mid-afternoon pick-me-up or as a sweet bite after dinner, and they make a great solution for what to do with extra cake.
To make cake truffles, mix together leftover cake with frosting in a medium mixing bowl. The frosting becomes the glue that holds the truffles together. Using clean hands, blend the cake and frosting together until you achieve a cohesive mixture that holds together in your hands. Use a small ice cream scoop to drop small amounts of the mixture into your hands. Roll between your palms to form a soft ball. Place the truffles in the freezer to firm up, at least 15 minutes or up to 24 hours.
In a double boiler or a heatproof bowl set over a pan of simmering water, melt semisweet, bittersweet, or white chocolate cut up into chunks. Let the melted chocolate cool slightly. Remove the prepared cake truffles from the freezer, and, with a fork, dip them into the melted chocolate, being sure to evenly coat the balls with the chocolate. Place the coated truffles on a wire rack set over a parchment-lined baking sheet and allow the excess chocolate to drip off.
You can garnish your coated cake truffles with chopped nuts, a sprinkling of colored sugar or toasted coconut, or a few flecks of sea salt. Transfer to the refrigerator to harden the chocolate before serving.
Turn Cake Scraps Into Baked Pudding
When you’re trimming a cake to follow a pattern for a specific design or making a layer cake, you may wonder what to do with the cake scraps. An easy way to keep scraps of cake from going to waste is to turn them into a baked pudding reminiscent of bread pudding. You can substitute leftover cake for the bread in your favorite bread pudding recipe, then bake as directed. Depending on how much leftover cake you have, you can prepare the baked pudding in a large oval or rectangular baking dish or in individual ramekins.
Transform Leftover Cupcakes Into Trifle
You’ve likely seen or tasted a trifle, a dessert featuring layers of cake, custard, whipped cream, and ingredients such as fresh fruit. If you’ve hosted a party and are wondering what to do with leftover cupcakes, try transforming them into a trifle.
If you’re working with already frosted cupcakes, remove the frosting to expose the tops of the cupcakes. Slice the cupcakes into quarters and place the cupcake slices in a single layer in the bottom of a straight-sided serving dish, such as a trifle dish. Spread your favorite custard, pudding, lemon curd, or other thickened filling over top of the cupcake pieces. Top with sliced fruit if desired. Spread a layer of whipped cream over top of the fruit and custard, and repeat the layering process until you’ve filled the dish or have used up all your leftover cupcakes.
